Raw Granola

1/2 cup whole rolled oats uncooked!
1 tsp. cinnamon
2 tbs. ground flax seeds
1 handful raisins
1 handful walnuts (chop after measuring)
soy milk

Put all dry ingredients in a bowl. Pour soymilk over dry ingredients. Use just enough to wet the dry ingredients and mix together. Eat! (1 serving)

Healthy Pizza

1 Pre-made pizza crust, wheat if possible
1/2 jar pizza sauce - find a kind with the least # of ingredients!
any fresh veggies you like, pile ''em on!
1-8 oz. bag of Soy cheese

Pour sauce on crust, add veggies and cheese. Cook according to crust directions! Enjoy!

Yummy Hummus

1 can garbanzo beans
1 tbs. tahini (sesame paste)
1 tsp. garlic powder
1 leaf fresh basil

Pour off some of the bean water from the can and pour beans into blender. Add tahini, garlic powder and basil. Blend to ''dip'' consistency. Use as a dip for fresh veggies or as a spread on a wheat pita chock full of other fresh veggies!

Fran''s Veggie Enchiladas (mom''s recipe!)

1/2 fresh zuchini, sliced
1/2 fresh yellow squash, sliced
Fresh sliced mushrooms
1/2 can artichoke hearts
Sliced onion
Sliced black olives
Whole wheat tortillas
Soy cheese
garlic salt
fresh ground pepper
fresh tomato slices

Slice veggies and sautee lightly in a pan with a little olive oil, garlic salt and pepper. Soften tortillas per package directions. Fill tortilla shells with sauteed veggies, sprinkle soy cheese over veggies, and add a spoonful of salsa over veggies. Roll up enchiladas and put in 9x13 pan. Sprinkle remaining veggies over top, sprinkle more soy cheese over top, lay fresh tomato slices on top and put in a 350 degree oven for 10 minutes. Take out and enjoy! Makes 4 servings.

Stuffed Tomatoes

6 medium tomatoes
1/4 cup chopped onion
1 chopped squash
1 small can sliced black olives
1 small choppped zucchini
1 chopped carrot
1/2 can garbanzo beans
italian spice
fresh basil (chopped)

Cut the tops off of the tomatoes and scoop out the insides carefully. Mix all ingredients except garbanzo beans, italian spice and basil in a large bowl along with the scooped out tomato insides. Pour 1/2 can of garbanzo beans into blender with some of the bean juice from the can. Add italian spice and fresh basil leaves (to taste) into blender and blend to pasty consistency. Pour into bowl with other ingredients and mix up. Use mixture in bowl to fill scooped out tomato shells and serve. Makes 3 servings.

Garden Fresh Veggie Stir Fry

Pour 2 tbs. olive oil into a stir fry pan at medium heat and add the following:
2 yellow squash cut into slices
2 small zucchini cut into slices
1 drained can garbanzo beans
1 small onion, sliced
1 small container of sliced mushrooms
1 small can of sliced black olives
Stir fry until veggies are soft but not mushy. Add garlic if desired and eat!
